config: Remove unnecessary calls from configure.ac
AC_PROG_CC & AC_PROG_INSTALL are provided by XORG_DEFAULT_OPTIONS now
PKG_CONFIG_MODULES handles AC_SUBST of the CFLAGS & LIBS variables
